Chef De Partie

Full Time

Plus, circa £3 per hour in tips paid monthly.

Tom’s Lyme Regis is an award-winning independent restaurant with an AA Rosette for culinary excellence and a great track record in training young chefs. We opened in 2020 and are now looking for a Chef De Partie to help us develop and grow the business further.

If you are passionate about local food, culinary excellence, high levels of restaurant service, and are looking to develop as a professional chef, then this role is just for you.

The Role

Our ideal candidate would have the ambition and drive to become a Sous Chef in a few years’ time. The role responsibilities include:

  • Bringing your love for food and creativity into seasonal dish development and menu planning. We encourage input into menus from chefs of all levels in our kitchen
  • Running your section independently, whilst maintaining consistency of food quality and timings
  • Assisting the Head Chef and Sous Chef in the management of junior chefs
  • Keeping up to date with kitchen HACCP procedures & daily due diligence checks, maintaining a clean section, and ensuring our 5* food hygiene ratings are maintained.
  • Assisting the kitchen team in keeping food waste to a minimum, contributing to effective stock management, and allowing us to maintain our values on sustainability.

To be successful you will need to demonstrate:

  • The drive to develop as a chef and bring new ideas to the team.
  • A passion for food and enthusiasm for the work they do
  • A desire to progress into kitchen management positions.
