Twelve Triangles is an independent scratch bakery producing sourdough bread and slowly fermented pastries across Edinburgh, baking for our 8 shops in and around Edinburgh. We’re looking for a full-time Night Baker to join our production team.

Job Details

  • Full-time (36–40 hours per week)
  • 4 nights per week
  • Typical shift: 8:00pm – 5:30am
  • Includes weekdays and weekends
  • Based at our production bakery

Key Responsibilities

  • Proving, baking and finishing pastries
  • Scoring and baking sourdough
  • Shaping and baking baguettes and ciabatta
  • Maintaining consistency and quality across all products
  • Working efficiently as part of a night team

Requirements

  • Previous experience in a bakery or professional kitchen
  • Night shift experience preferred
  • Ability to work independently and stay organised
  • Strong attention to detail and consistency
  • Interest in bread, baking and food production

Equipment & Environment

  • Bongard deck oven with automatic loader
  • Mono rack (wheel-in) oven for pastries
  • Roll-in prover

We’re an independent bakery focused on simple things made well. We work with small mills for our flour, use local cultured butter, and prioritise sourcing from local and small-scale suppliers.
