Food and Beverage Manager

Reports To

General Manager

Job Purpose

The Food and Beverage Manager is responsible for overseeing the day-to-day operation of all food and beverage outlets, ensuring exceptional guest experiences, maintaining high standards of food quality, service, cleanliness and profitability. The role involves leading and developing the team, managing budgets, controlling costs, and ensuring compliance with all health and safety and licensing regulations.

Key Responsibilities

Operations

  • Manage the daily operation of all food and beverage outlets.
  • Ensure consistently high standards of customer service and guest satisfaction.
  • Monitor food and beverage quality, presentation and service standards.
  • Coordinate restaurant, bar, banqueting and room service operations (where applicable).
  • Resolve guest complaints professionally and promptly.

Team Leadership

  • Recruit, train, coach and develop food and beverage staff.
  • Schedule staffing levels to meet operational demands while controlling labour costs.
  • Conduct regular team meetings and performance reviews.
  • Foster a positive, motivated and customer-focused working environment.
  • Ensure all staff comply with company policies and procedures.

Financial Management

  • Prepare and manage departmental budgets.
  • Monitor sales performance and implement strategies to increase revenue.
  • Control food, beverage and labour costs.
  • Analyse financial reports, including profit and loss statements.
  • Manage stock levels to minimise waste and maximise profitability.

Stock & Purchasing

  • Oversee purchasing and supplier relationships.
  • Conduct regular stock takes and inventory audits.
  • Ensure accurate stock rotation and storage procedures.
  • Minimise wastage through effective stock control.

Compliance

  • Ensure compliance with Food Safety, Health & Safety, licensing and employment legislation.
  • Maintain HACCP procedures and food hygiene standards.
  • Ensure all equipment is maintained and operating safely.
  • Lead health and safety inspections and risk assessments.

Sales & Marketing

  • Work with the marketing team to promote food and beverage offerings.
  • Develop seasonal menus and promotional campaigns alongside the Head Chef.
  • Monitor market trends and competitor activity.
  • Identify opportunities to increase customer spend and repeat business.

Guest Experience

  • Build strong relationships with guests.
  • Monitor guest feedback and implement improvements.
  • Ensure service standards consistently exceed customer expectations.

Qualifications & Experience

Essential

  • Previous experience as a Food and Beverage Manager or similar leadership role.
  • Proven experience managing teams within hospitality.
  • Strong understanding of food safety and health & safety regulations.
  • Experience managing budgets and achieving financial targets.
  • Personal Licence (where applicable).

Desirable

  • Hospitality Management qualification.
  • Level 3 Food Safety qualification.
  • First Aid qualification.
  • Experience using hospitality management and EPOS systems.

  • Food and beverage revenue growth.

Working Conditions

  • Full-time role, including evenings, weekends and bank holidays.
