The Role: General Manager- NEW opening;
Location: Glasgow
Package: £50-60K (negotiable pending experience)

Ellis Mack Recruitment is delighted to be working high profile independent Bar & Restaurant group in it’s new opening in Glasgow!

Newly acquired site in the city centre, currently undergoing complete refurb. Newly opened op will be combo, destination restaurant with strong drinks, cocktail offer. Anticipated high-volume, high-quality operation. Promises to be a quality addition to the Glasgow scene

My client is looking for an ambitious, driven GM from similar like for like operations. This is an expanding operation that will offer excellent career progression opportunities in time.

The Ideal Candidate Will:

  • Be a current General Manager or Restaurant Manager from a high-volume, quality-led bar or restaurant background (non-hotel).
  • Thrive under pressure and have a proven ability to lead from the front.
  • Demonstrate a genuine passion for food and drink with strong product knowledge.
  • Have solid experience in HR, recruitment, training, and team development.
  • Be commercially astute, with a clear understanding of budgets, margins, and P&L responsibility.
  • Be driven to deliver first-class standards across both front and back of house.
  • Show career stability, loyalty, and longevity within previous roles.

Key Responsibilities:

  • Take ownership of business development, driving sales and performance.
  • Manage all HR responsibilities, including recruitment, onboarding, training, and ongoing development.
  • Maintain robust daily stock control and supplier management.
  • Hold full financial accountability for the site(s), including cost control and profitability.
  • Lead and motivate teams to deliver consistently high operational standards.
  • Complete daily and weekly reconciliations, including sales, payroll, and end-of-week reporting.
