Restaurant Manager – Skew

Location: Bishop's Stortford Salary: £40,000 base + service charge Job type: Full-time, permanent

About Skew

Skew is a long-standing, much-loved local restaurant with a stunning canalside setting — a Mediterranean-inspired terrace, a high-spec conservatory and bar, and a private dining space that makes us a destination for everything from a relaxed lunch to a special occasion. We're passionate about our team and our customers, and it shows: many of our team have been with us for years, and our regulars keep coming back.

We're now looking for a Restaurant Manager to be the face of Skew — someone who lives and breathes hospitality and wants to lead from the floor, not from behind a desk.

The Role

This is a genuinely hands-on leadership role. You'll be the person our guests see, our team looks to, and our reputation rests on. You'll inherit a steady, reliable, long-serving team — your job is to lead them, back them, and keep raising the bar, while continuing to drive the commercial performance of the restaurant.

You'll report into the Group Operations Manager, with real autonomy to run Skew day to day.

What You'll Do

  • Be a visible, present leader on the floor — greeting guests, supporting service, setting the tone
  • Lead, motivate and develop an experienced, long-standing team
  • Own the commercial performance of the restaurant: revenue, costs, labour, and margins
  • Manage rotas, stock, supplier relationships and day-to-day operations across the restaurant, terrace, conservatory, bar and private dining space
  • Maintain the highest standards of food safety, licensing and compliance
  • Handle guest feedback and resolve issues with genuine care and confidence
  • Work closely with the Group Operations Manager on planning, reporting and wider business initiatives

What We're Looking For

  • Proven experience as a Restaurant Manager or senior Assistant Manager in a high-quality, high-volume hospitality setting
  • A natural, confident presence with guests — someone who enjoys being on the floor
  • Strong commercial acumen — comfortable with P&L, rotas, and cost control
  • A genuine people leader who can get the best out of an established team
  • Personal license holder (or willing to obtain one)
  • Flexibility to work evenings, weekends and bank holidays as the business requires
