CHEF DE PARTIE – PAN-ASIAN CUISINE

THE ROLE

You will take full ownership of your section, ensuring every element of preparation, cooking and presentation is completed accurately, consistently and to Nōshi’s exacting standards.

Your responsibilities will include:

* Running your section with confidence, pride and professionalism.

* Preparing and cooking every dish precisely to specification.

* Managing your mise en place and ensuring your station is fully prepared before every service.

* Following recipes, portion sizes, cooking methods and plating standards exactly.

* Demonstrating excellent preparation skills, knife skills and technical cooking ability.

* Working quickly, efficiently and calmly during high-volume services.

* Communicating clearly with the pass and the wider kitchen brigade to ensure a smooth and consistent service.

* Identifying immediately when an ingredient, preparation, flavour, texture or finished dish is not right and taking responsibility for correcting it.

* Checking the quality, taste, temperature and presentation of food before it leaves your section.

* Maintaining exceptional levels of cleanliness, organisation and personal hygiene at all times.

* Following all FIFO, food safety, allergen, temperature-recording, labelling and storage procedures.

* Supporting other sections and members of the kitchen brigade whenever required.

THE SKILLS AND STANDARDS WE ARE LOOKING FOR

We are not simply looking for someone who can work on a section. We are looking for chefs with strong technical ability, excellent standards and the right attitude to develop within a serious and ambitious kitchen.

You must have:

* Excellent preparation and mise en place skills.

* Fantastic knife skills and strong technical cooking ability.

* The discipline to follow recipes and specifications accurately and consistently.

* The experience and confidence to recognise when something is not right.

* A strong understanding of flavour, texture, temperature and presentation.

* Exceptional attention to detail across every element of food preparation and service.

* A genuine commitment to producing food to the highest possible standard.

* Pride in the quality and presentation of every plate leaving the kitchen.

* High standards of cleanliness, hygiene and organisation.

* The ability to remain calm, focused and efficient under pressure.

* A positive, professional and hardworking attitude.

* Strong communication skills and the ability to work effectively as part of a team.

* A willingness to learn, improve, accept feedback and share knowledge.

* Reliability, consistency and a strong sense of personal responsibility.

Previous experience within a high-quality, premium or high-volume kitchen is essential.

Experience within Japanese, Chinese, Asian or pan-Asian cuisine would be highly advantageous.
