Full job description

English & Sparkling Specialist wine bar company Fables & Company is looking for an experienced, unique and driven individual to join the leadership team in a full-time position as a Senior for Quill Wine Bar

Established in 2011, Fables & Company is an importer of fine sparkling & still wines from around the world. In 2018 it launched what would become ‘Plume’, its first wine bar and events space, offering a large rotating list of wines & cocktails alongside a sharing plates menu led by the seasons, exotic ingredients and creativity. The space hosts events and offers an array of canapés and feasting menus. We then opened Finch in Brixton in 2023, Quill in Borough Yards in 2024 and Finch Hideaway in Brixton in 2025. We are currently in negotiations for other venues across London.

You are a senior member with substantial fine or fine-casual restaurant experience, experience in ordering and managing a team. You are excited by wine & food, storytelling, sustainability, and continuing to build upon a strong, confident team. But above all you are a team player who can lead a team and inspire them.

The Role:

  • You will oversee the whole venue, including kitchen, floor and bar, working with the team as a whole and adapting the venue seasonally & creatively alongside the wine team
  • You will be a member of a caring, respectful team and will run rota’s and scheduling to maintain a sustainable & high quality work life for all members
  • You will oversee service, alongside an assistant manager and supervisors throughout the week, observing standards and adapting to aid efficiency & sales
  • You will be in charge of retaining existing & initiating new relationships with suppliers, plus organising orders and stock systems alongside the wine buyer
  • You will be in charge of overseeing and maintaining the venue’s safety & hygiene protocols
  • You will oversee the well-being of all staff and propel training for further growth
  • You are expected to keep open communication with owners, with all staff members and lead with a sense of compassion and inclusivity
