The Opportunity

Located in the heart of London’s most iconic food market, Bedales of Borough is looking for an exceptional, organized, and driven Sous Chef to join our management team, to bolster our kitchen team and help drive our food offering to another level!

Drawing inspiration from European bistros, vibrant tapas bars, and Venetian cicchetterie, we serve a constantly evolving menu of market-sourced small plates and bar snacks, all perfectly paired with our extensive wine list. With 150 covers—including a bustling outdoor terrace overlooking the market—we are an energetic, fast-paced venue hosting everything from daily service to large-scale private dinners and wine tastings.

The Package & Perks

  • Total Earnings: £47,000 – £50,000 per annum (Base salary of £35k + a share of substantial service charge)
  • Bonus: Performance-related bonus scheme on top of your OTE

The Role (What You'll Do)

As Sous Chef, you will work hand-in-hand with the management team to run a tight, efficient, and inspiring kitchen. Your focus will be divided between culinary excellence and robust kitchen management:

  • Kitchen Leadership: Lead by example, fostering a positive work ethic, high morale, and maintaining flawless standards of cleanliness and food hygiene.
  • Menu & Execution: Ensure precise recipe execution across the team while collaborating on creative, market-driven menu changes.
  • Commercials: Take ownership of stock controls, ordering, daily rotation of market produce, and precise recipe costing to maximize profitability.
  • Compliance: Maintain and manage all back-of-house health and safety systems flawlessly.

What We Are Looking For

  • Experience: Minimum of 2 years of experience operating as a Sous Chef (or equivalent senior role) in a high-volume, busy kitchen, alongside at least 5 years of professional cooking experience.
  • Skills: Strong organizational and communication skills—you know how to direct a team calmly under pressure.
  • Business Savvy: Solid understanding of food GP, stock takes, supplier ordering, and kitchen compliance.
  • The Passion: A genuine love for exceptional ingredients, great food, wine, and true hospitality.
