ROLE PURPOSE

The Food Beverage Supervisor is the shift leader. When they are on duty, they are the person in charge of the outlet, responsible for how the service runs, how the team performs, and how every guest and member is looked after, from the moment the doors open to the moment the shift is properly closed down and handed over.

This is a hands-on floor role. The Supervisor works within the plan set by the Food Beverage Manager and is expected to make confident decisions in the moment, without waiting for a manager to be present.


KEY RESPONSIBILITIES


Running the Shift

  • Take charge of the outlet for the duration of the shift, acting as the senior person present in the absence of a Manager.
  • Complete opening and closing procedures accurately, including floats, tills, equipment, temperature and HACCP checks, and the set-up of the space.
  • Lead a pre-shift briefing every shift covers and bookings, VIPs and members, menu changes and 86s, allergens, and one standard to focus on.
  • Set and manage the floor plan, section allocation, and break rotation, adjusting throughout the shift as covers and pace change.
  • Control the flow of service seating pace, table turns, kitchen communication, and timings, so the room feels calm regardless of how busy it is.
  • Complete cash-up and end-of-shift reporting accurately, and write a clear handover covering trade, incidents, guest feedback, and anything the next shift needs to know.
  • Act as the responsible person on shift for licensing, evacuation, first aid, and incident reporting, including Challenge 25 and the refusals log.

Guest Member Experience

  • Deliver warm, personalised, unhurried service to guests, members, and visitors, and set that tone for the team by example.
  • Recognise members and regulars, remember preferences, and brief the team on who is in and what matters to them.
  • Handle guest feedback and service recovery in the moment, escalating anything beyond your authority.

Team Leadership

  • Coach and support colleagues on the floor in real time, giving specific feedback rather than correction after the fact.
  • Train and buddy new colleagues on service standards, product knowledge, systems, and Aethos values, and sign off training records.
  • Raise performance, conduct, attendance, or wellbeing concerns promptly with the Food Beverage Manager.

Standards, Safety Compliance

  • Ensure food and beverage presentation, temperature, and quality meet brand expectations before anything reaches a guest.
  • Complete daily HACCP, allergen, and cleaning checks accurately — never signing off a check that has not been done.
  • Ensure allergen information given to guests is accurate and the full procedure is followed every time.
  • Maintain cleanliness and presentation throughout the shift and report maintenance issues through to resolution.

Commercial Support

  • Support the achievement of daily revenue and guest satisfaction targets for the outlet.
  • Encourage genuine, knowledge led recommendations that increase spend per head without a sales script.
  • Assist with stock control, ordering, and inventory counts, and control wastage and breakage on shift.

ABOUT YOU

Essential

  • Previous supervisory or shift-leading experience within a hotel, restaurant, members' club, or premium café.
  • The confidence to take charge of a shift and make decisions without a manager present.
  • Strong leadership and communication skills, with the ability to direct a team kindly and clearly.
  • Working knowledge of food safety, allergens, and UK licensing regulations.

Desirable

  • Experience within lifestyle or luxury hospitality.
  • Knowledge of coffee, wine, and beverage service, and hospitality POS systems (Lightspeed preferred).
  • Personal Licence, Level 2 Food Safety, or First Aid at Work.
