What we're looking for

We are looking for an enthusiastic Chef to lead the team to serve fantastic food for our hotel guests. Are you looking for your next step in catering and leisure? Do you want to work at a high-profile attraction where you can build a career?

What we need from you!

You will have previous experience in a leadership role, with experience as head chef, sous chef or senior chef de partie or equivalent, in a hotel, restaurant, gastro pub or the wider hospitality sector.

As our Lead Chef you'll be working across all areas of the kitchen and bringing fresh eyes and new ideas to lead with menu development and improving our food offering.

Main duties of the post

If you join our team you’ll require:

  • To produce and work to company specifications for menu plans and daily preparations.
  • To lead the kitchen team, including junior chefs, breakfast chefs, kitchen porters and agency support.
  • To ensure that all dishes leaving the kitchen/buffet are prepared to the approved standard of presentation and in a timely fashion.
  • To know and understand the requirements of the menus and to plan accordingly for operational needs.
  • To avoid unnecessary wastage, to observe proper portion planning and control and to act in a cost effective, responsible manner.
  • To ensure excellent food hygiene practice is observed in the entire food chain from storage through to preparation and service.
  • To be responsible for placing food orders, forming relationships with suppliers and achieving best prices to maximise gross profit
  • To ensure HACCP compliance within the kitchen and all Food & Beverage outlets.
  • To prepare effective and reliable schedules for staffing, food preparation and deep cleaning within the kitchen.
  • To work in accordance with any agreed deadlines and to assist and encourage others in achieving this aim.
  • To be personally responsible for hygiene, safety and correct use of equipment and utensils.
  • To play an integral part in ensuring a safe and secure environment for team members in compliance with company policies and procedures, all H&S legislative requirements and other statutory regulations.
  • To ensure effective communication between staff by maintaining a secure and friendly working environment.
