Sous Chef – INDidog Harbourside Restaurant

INDidog Harbourside Restaurant is an independent restaurant in the heart of Falmouth, Cornwall, known for local produce and food made with care and consistency. Our menus are vibrant and flavour-led, with a strong focus on quality, teamwork, and a positive kitchen culture.

We are looking for a passionate and experienced Sous Chef to join our kitchen leadership team. This role will work alongside our existing Sous Chef at the same level, supporting the Head Chef in the day-to-day running of the kitchen and helping to lead and develop the team.

Key Responsibilities

  • Support the Head Chef in daily kitchen operations
  • Share leadership responsibilities with the existing Sous Chef to ensure smooth kitchen service and operations
  • Step into the Head Chef role, alongside the other Sous Chef, during periods of absence
  • Lead, motivate, and manage the kitchen team in a positive and professional manner
  • Assist with menu planning, development, and accurate menu costing
  • Record, monitor, and minimise food wastage
  • Maintain INDidog brand standards, flavours, presentation, and consistency
  • Train, mentor, and develop kitchen team members
  • Ensure all food safety, hygiene, and compliance standards are met

What We're Looking For

  • Previous Sous Chef experience, or a strong Junior Sous Chef ready to step up
  • Ability to work collaboratively as part of a two Sous-Chef leadership team
  • Calm, quick, organised, and proud of high standards
  • Strong staff management and leadership skills
  • Experience with menu planning, costing, and waste control
  • A calm and organised approach in a busy kitchen environment
  • A positive, nurturing management style
  • Proven people-management skills - one of the most essential ingredients for success in this role
  • Ability to manage upwards effectively and communicate confidently with senior management, as well as lead and support your team
