The role — what you’ll do

  • Act as a key member of the management team, taking full responsibility as Duty Manager to oversee restaurant service and ensure smooth operations across all areas.
  • Lead by example on the floor, driving exceptional guest experiences, service standards and team coordination.
  • Take ownership of the bar and beverages programme, ensuring the cocktail, wine and drinks offer is innovative, premium and commercially strong.
  • Manage and inspire the bar team, delivering training, tastings and coaching to maintain consistency and excellence.
  • Handle supplier relationships, ordering, stock control and GP management for the bar.
  • Uphold all licensing, health and safety, and compliance standards.
  • Work closely with the General Manager and Assistant General Manager to execute the overall vision of Nōshi, supporting both day-to-day service and long-term development

What you bring

  • Proven experience as a Bar Manager or senior bar leader in a high-end, high-volume hospitality environment.
  • Deep knowledge of cocktails, wines, spirits, suppliers and bar operations, with a strong commercial focus.
  • Leadership skills with the ability to motivate, train and manage a team in a premium setting.
  • Experience as a Duty Manager or in a broader management role within a restaurant, not just bar-focused.
  • Strong organisational and financial acumen, with a track record of delivering results.
  • A calm, confident and engaging presence on the floor, ensuring both bar and restaurant service flow seamlessly.
  • A genuine passion for luxury hospitality, guest experience and creating memorable moments.
