Full job description

Zeta Thomas are recruiting a Sommelier on behalf of one of Mayfair's busiest late-night restaurants. High-energy room, bold food, a strong celebrity and VIP crowd, and a real bottle service culture, prestige champagne, aged spirits, drinks delivered with some theatre.

This role is broader than a typical sommelier position. Bottle service is a big part of the job alongside wine knowledge, so you need to be as comfortable being visible and confident on the floor as you are recommending a wine.

What the role involves:
Delivering bottle service with confidence and presence
Recommending wine to a high-profile guest base
Handling prestige champagne and rare spirits properly
Keeping pace when plans change at short notice
Shifts that vary, roughly midday to 1am

What we're looking for:
WSET Level 3, minimum
Experience in a high-end, high-volume, late-night venue with proper bottle service
Comfortable with presentation and theatre, not just formal wine service
Confident with guests, good under a fast-changing floor
Team player rather than someone wanting to run a wine role solo

Sponsorship isn't available for this position. Candidates need the right to work in the UK already.
