Assistant General Manager

Location: Edinburgh

Reporting to: General Manager

Salary: £52,500 guaranteed package, plus £5,000 performance-related bonus

Holiday: 28 days per year, including bank holidays

About the Restaurant

We are recruiting for one of Edinburgh’s leading high-volume restaurants. The business operates with exceptional guest throughput, strong trading levels and a fast-paced service environment.

The restaurant is already successful and operationally strong, but it is now entering a more structured phase of development. The focus is on strengthening consistency, service standards, training, management routines and overall execution across the business.

The Role

We are seeking an experienced Assistant General Manager to take ownership of service delivery, team performance and operational standards within a very busy restaurant environment.

This is a high-intensity, service-led role where consistency, pace, floor control and attention to detail are critical. The successful candidate will lead from the floor, take responsibility for standards and execution, and work closely with the General Manager and wider management team to ensure the restaurant operates with discipline, structure and consistency.

This is not simply a shift-running role. We are looking for someone who can help embed stronger service standards, clearer routines, better training, sharper briefings and more consistent daily execution.

Candidates with experience in structured, high-standard restaurant groups or premium hospitality businesses such as Hawksmoor, Dishoom, Ottolenghi or similar would be particularly relevant.

This is not a role for candidates without experience in high-volume, high-turnover restaurant environments.

Key Responsibilities

-Full ownership of floor operations and service delivery during allocated shifts

-Accountability for team performance, standards and shift execution

-Lead, train and develop a high-performing front-of-house team

-Maintain consistency across high-frequency service with rapid table turnover

-Drive service standards, floor discipline, guest recovery and management presence

-Work closely with the General Manager and wider management team to ensure consistency across the whole operation

-Improve pre-shift briefings, handovers, opening routines, section management and service checks

-Help turn informal operating knowledge into clear, repeatable systems and standards

-Support hiring, onboarding, training plans and rota structure in collaboration with the General Manager

-Identify weaknesses in service execution and implement practical improvements

-Lead from the floor with pace, control, professionalism and attention to detail

Ideal Candidate

-Minimum 5 years’ experience as a Restaurant Manager, Assistant General Manager, Senior Floor Manager or equivalent in a high-volume restaurant environment

-Experience in a structured, standards-led hospitality business

-Proven ability to manage fast-paced, high-turnover service with consistency

-Demonstrated success in training teams to deliver repeatable, high standards

-Strong floor presence and confidence leading large teams during busy service

-Clear understanding of labour control, service efficiency and the link between standards, guest experience and revenue

-Able to improve standards without creating unnecessary conflict

-Highly organised, practical and commercially aware

-Strong attention to detail and operational discipline

-Comfortable using briefings, checklists, table plans, service observations, guest feedback and management routines to improve daily execution

What Success Looks Like

Success in this role will mean service becomes more consistent, more structured and less dependent on individual habit.

Supervisors and front-of-house team members will be better trained. Briefings will be sharper. Handovers will be cleaner. Guest recovery will be more consistent. Reviews and guest feedback will improve. Standards will be visible on the floor every day, not just when the strongest manager is working.

The aim is not to create a corporate or mechanical style of service. The aim is to combine the pace and personality of a successful independent restaurant with the discipline, training and repeatability of the best premium restaurant groups.
