The Dog and Pheasant is a charming 16th Century country pub nestled in the heart of Surrey. Our commitment to providing a memorable experience for our guests is at the heart of everything we do.

Position overview:

We are seeking a passionate and experienced Chef de Partie looking for a step up or an established Sous looking for an creative opportunity. The successful candidate will work closely with our Head Chef to lead our kitchen team in delivering high-quality, seasonal dishes that delight our guests.

Responsibilities:

  • Assist the Head Chef in all aspects of kitchen management, including menu planning, food preparation, and inventory management.
  • Oversee and mentor junior kitchen staff, ensuring high standards of food quality, presentation, and consistency.
  • Take a hands-on approach in preparing and cooking dishes during service, maintaining an efficient and organised kitchen operation.
  • Ensure compliance with health and safety regulations and food hygiene standards at all times.
  • Contribute creative ideas for menu development, incorporating seasonal ingredients and local produce.
  • Collaborate with suppliers to source the freshest ingredients and maintain strong relationships with local producers.

Requirements:

  • Proven experience in a pub or gastro-pub setting.
  • Excellent culinary skills with a passion for British cuisine and traditional cooking techniques.
  • Strong leadership abilities with the ability to motivate and inspire a team.
  • Solid understanding of kitchen operations, including food costing, ordering, and stock control.
  • Creativity and innovation in menu development, with a keen eye for detail and presentation.
  • Ability to work well under pressure in a fast-paced environment.
