Lead One of Edinburgh's Most Exciting Independent Dining Destinations

Location: Edinburgh
Salary: £40,000+ per annum
Tips: Approx. £10,000 per annum
Working Pattern: Wednesday-Saturday service (4 trading days) plus home-based admin responsibilities

My client, an acclaimed Edinburgh restaurant celebrated for its creative tasting menus and Scotland's finest seasonal produce, is seeking an exceptional Restaurant Manager to lead the front-of-house operation and guest experience.

This is a unique opportunity to become the second-in-command of the business, working closely with ownership to drive performance, raise the restaurant's profile, and contribute to future growth plans.

About the Role

As Restaurant Manager, you will oversee the day-to-day operation of the restaurant, lead a small team, maintain exceptional service standards, and ensure every guest receives a memorable experience.

You will act as a key ambassador for the business, building relationships with guests, identifying revenue opportunities, and supporting the continued success of the restaurant.

Key Responsibilities

  • Lead all front-of-house operations.
  • Deliver exceptional guest experiences.
  • Build customer relationships and encourage repeat business.
  • Maximise upselling opportunities.
  • Work closely with the kitchen team to ensure seamless service.
  • Lead, support and develop a small team.
  • Manage reservations, rotas, ordering, reporting and compliance.
  • Maintain outstanding service standards.
  • Support marketing, partnerships and promotional activities.
  • Contribute to the business's ongoing growth and development.

About You

We are looking for an ambitious hospitality professional with a genuine passion for food, drink and world-class service.

Essential

  • Experience as a Restaurant Manager, Assistant Restaurant Manager or senior hospitality leader.
  • Michelin-starred or equivalent high-end dining experience.
  • Outstanding guest engagement and communication skills.
  • Strong leadership and team management ability.
  • Commercial awareness with a focus on revenue growth.
  • Excellent organisational and administrative skills.
  • Passion for delivering exceptional hospitality.

Desirable

  • Strong wine knowledge and interest in food pairing.
  • Sommelier qualifications or wine certifications.
  • Experience within tasting menu or fine dining environments.
  • Experience supporting business growth and operational development.
