Job Introduction

Pennyhill Park in Bagshot, Surrey, part of the Exclusive Collection, is one of the UK's finest luxury hotels and home to The Latymer, the hotel's Michelin-starred and 5 AA Rosette restaurant. Led by Steve Smith, The Latymer is renowned for its exceptional cuisine, world-class service and meticulous attention to detail, offering guests an unforgettable fine dining experience in an elegant setting.

You will join as Restaurant Manager for The Latymer, working alongside Head Chef Steve Smith to deliver an exceptional Michelin-star dining experience. Key Responsibilities

  • Lead the day-to-day operation of The Latymer, ensuring exceptional guest experiences at every service.
  • Work closely with Steve Smith and the kitchen team to deliver a seamless and memorable Michelin-star dining journey.
  • Inspire, coach and develop the front-of-house team, fostering a culture of excellence, professionalism and continuous improvement.
  • Maintain the highest standards of service, presentation and attention to detail expected within a Michelin-starred environment.
  • Manage rotas, labour costs, stock control and departmental budgets effectively.
  • Drive revenue opportunities through exceptional food and beverage knowledge, including wine recommendations and pairing experiences.
  • Build strong relationships with guests, creating memorable experiences that encourage loyalty, advocacy and repeat visits.
  • Work collaboratively with the sommelier and kitchen teams to ensure a consistent and exceptional guest journey.
  • Ensure compliance with all health, safety, licensing and company standards.

Person Specification

  • Proven experience as a Restaurant Manager or senior restaurant leader within a Michelin-starred, fine dining or luxury hospitality environment.
  • Passion for exceptional food, wine and world-class service.
  • Experience leading teams within premium restaurants, luxury hotels or destination dining venues.
  • Experience leading teams within premium restaurants, luxury hotels or destination dining venues.
  • Strong leadership skills with a proven track record of developing and motivating high-performing teams.
  • Commercially aware with experience managing costs, budgets and driving departmental performance.
  • Excellent communication, organisational and interpersonal skills.
  • Calm, professional and confident in a high-pressure service environment.
  • WSET qualification desirable but not essential.
  • A genuine passion for hospitality and creating unforgettable guest experiences.
