Full job description

Please note: this is not a "live in" position. Preference will be given to applicants living (or relocating to) within a 20 mile radius of Ulverston.

The Mill at Ulverston is a beautiful and highly regarded food, drink and functions venue. Located in the heart of Ulverston, it is easily accessible from anywhere in South Cumbria or North Lancashire.

Purchased by Lancaster Brewery in 2009, we've spent fifteen years improving, refurbishing and reinventing this lovely pub and restaurant. It now consists of three separate bar areas, including a large ground floor cask ale bar and snug, first floor Terrace bar and second floor cocktail/function area. In addition we have a first floor restaurant and a large, pretty outside terrace.

The entire venue has been designed and targeted at the full range of local and passing visitor. From the fine & casual diners hunting quality food, to cask ale or lager drinkers, to customers seeking a cocktail. We have rustic areas, more stylistically designed rooms and designer bar concepts - all in one building over three floors of a converted 18/19th century town mill.

We are fortunate to have an established and highly skilled kitchen team who are capable of producing high end fine dining options alongside buffets and the ever popular casual dining choices. We are open for food seven days a week, lunch and evening.

Recruitment - Job Spec:

We are now seeking to recruit an individual capable of drawing all these strands together and driving the venue forwards. The role will consist of the following duties:

  • Leading from the front, motivating, enthusing, organising and driving our experienced team of bar/restaurant staff, supervisors, chefs and Assistant Managers.
  • Ensuring excellent standards are always achieved, routines adhered to, weekly paperwork produced on time.
  • Continually evolving and improving our food and drink offer.
  • Staff training, recruitment, management and discipline.
  • Functions management.
  • Part of the Lancaster Brewery management team - this role reports into the Operations Manager based in Lancaster.

Person Specification:

  • Experience as a General Manager or Assistant Manager in a busy, quality venue.
  • Someone motivated and able to manage change to bring the venue in line with company standards (support and guidance for this from senior management team).
  • Organised and able to balance daily, weekly and monthly tasks all while being the face and character behind the bars and on the floor. This is not an office-based role.
  • Bright, enthusiastic, positive approach to front of house and staff management.
  • Curious and interested in food and drink. Able to input into menu design and the evolution of our drink offer.
  • Cellar management and weekly paperwork experience would be desirable but it's not essential.

Lancaster Brewery - why you should work for us.

Lastly, a bit about Lancaster Brewery and how we operate our businesses. We are and have been owner managed for over twenty years, and have an unsurpassed reputation for fairness, high staff retention and promoting internally whenever possible.

All our senior management team have been with us for 12 years plus, our managers have at least 5 years experience working for the business. We supported and kept all our staff during the Covid period.

As a company we are financially well managed, profitable and have an impeccable credit record. The business is constantly evolving and growing, with new companies popping up within the group every year. In the last couple of years we've launched a multi award winning bar at Lancaster railway station, a distillery and next year we will open our own whisky distillery. There are always new things, projects or initiatives for managers to involve themselves with.

In addition we are exceptionally innovative - we have state of the art back of house IT systems, work force planning, staff planning/welfare/payment systems. We are always hunting for interesting, innovative and fun ways to impress and attract customers.

Support/training/encouragement is always available. If people want external training on something that will help them improve our venues, we will cover those costs.

We have an excellent bonus package which is paid in addition to the salary quoted - the bonus is based on profit and performance.
