We have a new opening for a Sous Chef in both our restaurant in Rye (The Hoof) and our restaurant in Tenterden (The Hoof and Hook). If you would like to join our fabulous team, please read on for more information.

The Hoof & Hook Restaurant in Tenterden, Kent, or The Hoof in Rye, East Sussex

This family owned group of restaurants prides itself on its use of local produce including beef and potatoes from the family owned farm, fish from local fishing fleets and wine, beer and craft spirits from local producers.

While the menu headlines on Steaks and Burgers the varied menu has quickly attracted a loyal local following across both our sites.

The successful Sous Chef will undertake the following duties:

· Supporting the general running of the kitchen.

· Onboarding potential new employees.

· Collaborating with the menus.

· Working within specified budgets.

· Ensuring the kitchen meets high standards of quality.

· Completing food hygiene documents to comply with the law and writing environmental health reports when necessary.

· Establishing strong relationships with staff in other areas of the business, including managers and front of house teams.

· Deputising for the head chef in their absence.

· Communicating with front of house staff.

· Ordering supplies and negotiating with suppliers where necessary.

· Managing inventory and keeping control of stock.

· Organising produce and ensuring strict adherence to food hygiene regulations.

· Supervising all food preparation.

· Maintaining an organised and clean kitchen.

· A team player but also have the ability to work on your own initiative

· Able to follow guidelines and remain calm under pressure


Following on from the success of the family’s first restaurant, Hoof, in historic Rye the Hoof & Hook builds on the theme of locally produced food served in family friendly surroundings. You will be joining an ambitious team with the opportunity for career advancement and the opportunity to share in the success
