I'm Stuart, and I run The Wild Goose alongside an experienced team who help bring the venue to life every day.

The Wild Goose is our flagship restaurant and bar in the heart of Aberdeen. We're independent, ambitious, and incredibly proud of what we've built in our first year of being open.

We've created something that feels different. A place where great food, cocktails, wine, atmosphere, and genuine hospitality all come together. Somewhere that feels special without ever feeling stuffy.

One thing that's particularly important to me is the team. I want The Wild Goose to be somewhere guests genuinely love spending time, but just as importantly, somewhere the team genuinely enjoys working.

Hospitality is hard enough without working in an environment that lacks support, trust, and good leadership. The atmosphere behind the scenes matters every bit as much as the atmosphere our guests experience.

Standards matter.

And the best venues get both right.

As we've grown, it's become increasingly clear that The Wild Goose needs someone who can fully dedicate themselves to leading the venue, supporting the team, and helping us continue building on what we've achieved so far.

That's why this role matters so much.

The Role

I'm looking for a General Manager to lead The Wild Goose.

This isn't a role for someone who wants to sit in the office and manage through paperwork.

It's a hands-on leadership role. You'll be visible on the floor, present with the team, involved in the guest experience, and fully invested in the day-to-day operation of the business.

You'll work closely with me and the senior management team, helping shape the future of the venue whilst maintaining the standards that have made it successful.

The Wild Goose is a busy, fast-paced operation set across three distinct floors, each with its own identity:

  • Upstairs is our premium brunch, small plates, and cocktail/wine bar, offering a vibrant yet relaxed dining experience.
  • Downstairs is a lively bar centred around cocktails, wine, and Asian-inspired street food (opening soon).
  • The Victorian Toilets, a beautifully restored historic space beneath the venue, serves as a unique private events and functions venue.

What You'll Be Doing

  • Leading and developing the management team
  • Creating a culture where people enjoy coming to work
  • Driving exceptional guest experiences every day
  • Maintaining high standards across food, drinks, service, and cleanliness
  • Managing labour, stock, GP, and budgets responsibly
  • Working closely with the kitchen and front-of-house teams
  • Supporting recruitment, training, and progression
  • Being present during key service periods
  • Handling issues calmly and professionally
  • Helping improve systems and processes where needed
  • Organising events and private hire business
  • Working with the senior team on future growth opportunities
  • Being accountable for the overall success of the venue

Who I'm Looking For

  • Strong hospitality leadership experience (required)
  • Excellent understanding of labour control, GP, stock management, and financial performance (required)
  • Practical, organised, and solutions-focused
  • A strong firm communicator who can be direct when needed but always fair
  • Someone who wants to build a team, not just manage one.
  • Most importantly, I'm looking for someone who genuinely cares.
  • Someone to get a pint with.

The Wild Goose has achieved a lot in a short period of time, but I believe we're only getting started.
