Overview

We are seeking an experienced and dynamic General Manager to oversee the daily operations of our restaurant.

Founded over 38 years ago, Meson Don Felipe is one of London’s original and best-loved Spanish tapas bars — a lively, family-run institution in the heart of Waterloo. Known for its authentic atmosphere, great food and loyal following, we take pride in offering genuine hospitality with warmth and character. Key Responsibilities

  • Lead and motivate the front of house teams to deliver warm, authentic and efficient service.
  • Oversee daily operations to ensure smooth service, consistency and attention to detail.
  • Manage staff scheduling, training, and performance to maintain a positive and professional working environment.
  • Uphold and promote the bar’s long-standing values, heritage and reputation for genuine Spanish hospitality.
  • Drive sales and profitability while managing costs, budgets, and supplier relationships.
  • Ensure compliance with health, safety and licensing regulations.
  • Monitor stock levels, oversee ordering and control waste effectively.
  • Build strong relationships with regular guests and the local community to maintain our loyal following.
  • Identify opportunities to improve guest experience and operational efficiency.
  • Report to the owners on performance, team development and business opportunities.

What We’re Looking For

  • At least 2 years’ experience in a management or supervisory role within hospitality.
  • At least 5 years experience in front of house management.
  • A hands-on leader who takes responsibility and leads by example.
  • Warmth, empathy and strong people skills to inspire and support the team.
  • The ability to work closely and collaboratively with the kitchen to ensure smooth service and consistency.
  • A genuine passion for great food, drink and creating memorable guest experiences.
