GENERAL MANAGER

The Hare & Hounds, Fulbeck, Lincolnshire

Salary: £40,000–£42,000 per year + performance bonus of up to £5,000

Full-time | Permanent

The Hare & Hounds is an established country pub, restaurant and eight-bedroom inn in the Lincolnshire village of Fulbeck.

We are looking for an experienced and commercially minded General Manager to take overall responsibility for the day-to-day operation and performance of the business.

This is not simply a front-of-house management position.

We are looking for someone who wants to run a business.

Working directly with the owners, you will have genuine responsibility and autonomy across the operation, including the pub, restaurant, bedrooms, private dining, people, financial performance and guest experience.

THE OPPORTUNITY

The Hare & Hounds is part of a small independent hospitality business operating two venues in Lincolnshire.

As we continue to develop the business, we are strengthening our senior management structure and are looking for a General Manager who can take ownership of the Hare & Hounds.

You will lead the management team, including the FOH Manager and Head Chef, and be accountable for delivering both excellent hospitality and strong commercial performance.

For the right person, this is an opportunity to move beyond simply managing shifts and become responsible for the performance and development of an entire property.

We would therefore welcome applications from both experienced General Managers and strong Deputy General Managers, Operations Managers or F&B Managers who are ready to take the next step.

YOUR RESPONSIBILITIES

Leadership & People

  • Lead the day-to-day operation of the Hare & Hounds.
  • Manage, support and develop the FOH Manager, Head Chef and wider team.
  • Create a positive, professional and accountable working culture.
  • Oversee recruitment, onboarding, training and performance management.
  • Ensure management responsibilities are properly delegated rather than becoming dependent upon one individual.
  • Maintain appropriate staffing levels across the business.
  • Take ownership of management communication and standards.

Commercial Performance

You will be expected to understand the numbers behind the business and use them to make good operational decisions.

Responsibilities will include:

  • Managing labour costs and productivity.
  • Monitoring food and beverage gross profit.
  • Controlling purchasing, wastage and stock.
  • Reviewing weekly sales and performance.
  • Managing rotas against forecast demand.
  • Identifying opportunities to improve revenue and profitability.
  • Working with the owners on budgets and financial targets.
  • Taking corrective action when performance moves away from agreed targets.

You don’t need to be an accountant, but you must be comfortable understanding a P&L and managing a business against KPIs.

Guest Experience

  • Maintain consistently high standards of hospitality.
  • Be visible and engaged with guests and the team.
  • Take ownership of guest feedback and complaints.
  • Monitor reviews and identify recurring issues.
  • Ensure the pub, restaurant and bedrooms are consistently presented to a high standard.
  • Build relationships with regular guests and the local community.

Food & Beverage

Working alongside the Head Chef and FOH Manager, you will:

  • Ensure strong communication between kitchen and front of house.
  • Maintain service standards.
  • Monitor food and beverage margins.
  • Oversee stock controls and purchasing disciplines.
  • Help develop the commercial performance of the food operation.
  • Ensure menus, pricing and service style remain appropriate for the business.

The Head Chef will retain responsibility for the day-to-day running of the kitchen, but the General Manager will have overall operational and commercial responsibility for the property.

Bedrooms & Private Dining

The Hare & Hounds has eight guest bedrooms alongside its pub and restaurant operation.

You will oversee:

  • Bedroom standards and guest experience.
  • Occupancy and room revenue.
  • Online reputation and guest feedback.
  • Housekeeping standards.
  • Private dining and function enquiries.
  • Converting enquiries into confirmed bookings.
  • Maximising the value of accommodation, dining and events working together.

Compliance & Property

  • Ensure licensing requirements are followed.
  • Maintain health & safety and food safety standards.
  • Ensure required checks and records are completed.
  • Identify maintenance issues and ensure they are followed through.
  • Coordinate contractors where appropriate.
  • Ensure the property remains safe, compliant and well maintained.

WHAT WE ARE LOOKING FOR

We are particularly interested in candidates with experience in:

  • Quality pubs or gastropubs.
  • Restaurants.
  • Boutique hotels or inns.
  • Food-led hospitality businesses.
  • Hotel F&B or operations management.

You may already be a General Manager.

Alternatively, you may currently be a Deputy GM, Operations Manager or experienced F&B Manager looking for your first opportunity to take full responsibility for a property.

The right person will be:

  • Commercially aware.
  • Confident managing people.
  • Comfortable making decisions.
  • Organised and accountable.
  • Strong with guests.
  • Able to lead managers as well as frontline employees.
  • Comfortable working directly with business owners.
  • Able to balance hospitality standards with commercial reality.

Most importantly, we want someone who takes ownership.

When something isn’t working, we want a manager who identifies the problem, develops a solution and follows it through.

WHAT WE OFFER

£42,000–£45,000 basic salary

plus

Performance-related bonus of up to £5,000 per year

The bonus will be based on a balanced range of measures including:

  • Gross profit performance.

  • Operational standards.
  • Team performance and retention.

WORKING PATTERN

Hospitality requires flexibility and the General Manager will need to be present during important trading periods.

The role will therefore be structured around sensible management planning rather than creating a culture where the General Manager is expected to personally cover every operational problem.

A key part of the role is building and developing a management team capable of running the operation effectively.
