Oplu is leading the search for an F&B & Wine Service professional to join the hospitality team at a distinguished luxury country hotel, vineyard, and retreat in West Dorset.

The property blends hospitality with farming, vineyard, and wellness operations. The role covers three connected remits: F&B service and promotion, Wine service and sales (in-house, cellar door, and wholesale), and Activities / Experiences / Events.

The successful candidate will take a lead role in F&B service, cover the Head of F&B in their absence, take full ownership of the Wine Tasting Room, and drive revenue through upsell of food, drink, activities, and events. On-site, 40 hours per week, weekend and evening shifts required.

Staff accommodation is available in nearby Bridport for candidates relocating (£450-£750 per month depending on room). A full driving licence and own car are essential given the rural setting.

Responsibilities

- Lead F&B service across breakfast, lunch, dinner, and events
- Cover for the Head of F&B in their absence (service, training, team, rota, stock)
- Full responsibility for the Wine Tasting Room (cleanliness, presentation, security)
- Deliver wine service, education, and sales in-house, at the cellar door, and wholesale
- Upsell food, drink, activities, experiences, and events
- Support the preparation, activation, and clearance of activities, experiences, and events
- Liaise with the Kitchen and Guest Relations teams for timely, proficient service
- Maintain full CRM proficiency for operational and governance accuracy
- Take payments in line with Financial Procedures
- Maintain F&B areas to a high standard of cleanliness, sanitation, and presentation
- Act as Competent Person under the property's Health & Safety Policy on shift

Requirements

- Prior senior F&B service, wine service, sommelier, or comparable hospitality experience at a boutique or luxury property
- APLH (Personal Licence Holder) qualification (or willingness to complete before start)
- Basic Food Hygiene, HACCP, Manual Handling (or willingness to complete before start)
- Solid working knowledge of wine service standards and food and wine pairings
- Comfortable taking payments and complying with Financial Procedures
- Full driving licence and own car
- Weekend and evening shift availability
- Fluent English
- Right to live and work in the UK

Strong advantage

- WSET Level 2 or higher
- Sommelier or Junior Sommelier experience
- Cellar door sales, wine tasting room, or vineyard hospitality experience
- Wholesale wine sales experience
- Mews PMS experience
- Voluntary First Aid at Work and Fire Safety training
- Yacht interior, luxury villa, private club, fine-dining, or Michelin-standard background
