Full job description

We are seeking a talented and passionate South Indian Curry Chef to join the culinary team of a prestigious fine dining restaurant in London. The successful candidate will have strong expertise in authentic South Indian cuisine, with a particular focus on curries, regional specialties, spice blending, and modern presentation techniques suitable for a high-end dining environment.

Key Responsibilities

  • Prepare and cook a range of authentic South Indian curries and regional dishes to exceptional standards.
  • Develop and maintain consistency in recipes, flavours, and presentation.
  • Create fresh masalas, spice blends, stocks, and curry bases from scratch.
  • Ensure all dishes meet the restaurant's quality, hygiene, and presentation standards.
  • Work closely with the Head Chef and culinary team on menu development and seasonal specials.
  • Manage mise en place, stock rotation, and ingredient ordering within the curry section.
  • Maintain food safety and HACCP compliance at all times.
  • Train and mentor junior kitchen staff where required.
  • Support smooth kitchen operations during busy service periods.

Requirements

  • Minimum 3–5 years' experience as a South Indian Curry Chef, preferably in a premium or fine dining environment.
  • Strong knowledge of South Indian regional cuisines including Tamil Nadu, Kerala, Karnataka, and Andhra styles.
  • Expertise in preparing traditional curries, seafood dishes, vegetarian specialties, dosa accompaniments, and house-made spice blends.
  • Ability to work in a fast-paced, high-quality kitchen environment.
  • Excellent understanding of food safety and hygiene standards.
  • Strong organisational skills and attention to detail.
  • Eligibility to work in the UK.

Preferred Experience

  • Experience working in award-winning, luxury hotel, or fine dining restaurants.
  • Knowledge of modern plating and contemporary Indian cuisine.
  • Experience contributing to menu development and recipe innovation.
