Full job description
We are looking for an experienced and passionate Indian Chef to join our busy pub, bar and grill.
The successful candidate will have strong knowledge of authentic Indian cooking, particularly Punjabi and North Indian cuisine, alongside experience preparing popular bar-and-grill dishes. You will be responsible for producing consistently high-quality food, maintaining excellent kitchen standards and helping us develop a menu that appeals to both traditional and modern diners.

Key Responsibilities
- Prepare and cook authentic Indian dishes to a consistently high standard.
- Produce a range of curries, starters, biryanis, rice dishes, breads and accompaniments.
- Prepare traditional and modern Punjabi dishes.
- Operate the tandoor safely and confidently.
- Prepare grilled meats, mixed grills, kebabs, tikka dishes and seafood.
- Marinate meats and prepare sauces, gravies, spice mixes and curry bases.
- Deliver consistent taste, presentation and portion sizes.
- Follow standardised recipes and ensure all dishes meet the required specifications.
- Help create and improve the Indian pub-and-grill menu.
- Contribute ideas for specials, seasonal dishes and new menu launches.
- Prepare food efficiently during busy lunch and evening services.
- Coordinate orders to ensure dishes are served promptly and together.
- Monitor food quality before dishes leave the kitchen.
- Manage preparation levels to meet expected customer demand.
- Minimise food waste through accurate preparation, portion control and stock rotation.
- Check incoming deliveries for quality, quantity and freshness.
- Store ingredients correctly using FIFO stock-rotation procedures.
- Monitor stock levels and inform management when ingredients need to be ordered.
- Maintain accurate date labels and food-preparation records.
- Keep the kitchen, preparation areas, equipment and storage areas clean and organised.
- Follow all food hygiene, allergen, health and safety and HACCP procedures.
- Complete temperature checks and other food-safety records accurately.
- Prevent cross-contamination and follow safe procedures for raw and cooked food.
- Communicate clearly with front-of-house staff and management.
- Support, train and supervise junior kitchen team members when required.
- Assist with opening and closing kitchen procedures.
- Report equipment faults, maintenance issues and food-safety concerns immediately.
- Work flexibly across evenings, weekends, bank holidays and busy periods.
Essential Requirements
- Previous professional experience as an Indian Chef, Curry Chef, Tandoor Chef or similar.
- Strong knowledge of Punjabi and North Indian cooking.
- Experience preparing curries, sauces, marinades, kebabs and grilled dishes from scratch.
- Confidence using a tandoor and commercial kitchen equipment.
- Good understanding of food hygiene, allergens and cross-contamination controls.
- Ability to work calmly and efficiently during busy service.
- Strong attention to taste, presentation, consistency and portion control.
- Good time-management and organisational skills.
- Ability to work independently and as part of a team.
- Reliable, punctual and committed to maintaining high standards.
- Able to communicate effectively with colleagues and management.
- Flexibility to work evenings, weekends and bank holidays.
- The legal right to work in the United Kingdom.
Desirable Requirements
- Level 2 or Level 3 Food Safety and Hygiene qualification.
- Experience working in a high-volume pub, restaurant or bar-and-grill environment.
- Experience preparing Indo-Chinese dishes and modern Indian street food.
- Knowledge of menu costing and gross-profit management.
- Experience managing stock, ordering and supplier relationships.
- Previous responsibility for training or supervising kitchen staff.
- Knowledge of vegetarian, vegan, halal and gluten-free food preparation.
