General Manager — The Talli Queen

Location: The Talli Queen, 412 Uxbridge Rd, London W12 0NR

Start date: ASAP

Overview

We are seeking a dynamic and energetic General Manager to lead operations at The Talli Queen, a striking new high-end pub set within a Grade II listed building. The name says it all — "Talli" is Hindi slang for tipsy, and the pub takes its spirit from Varuni, the Hindu goddess of wine, celebration and pleasure. Paired with a seasonal Indian menu from Head Chef Avi (formerly of Pahli Hill and River Cafe), this is a pub built on seasonal flavours, great wine and a genuine love of hospitality.

In this pivotal role, you will oversee daily operations, drive sales growth, and foster a vibrant team environment from day one. Your leadership will ensure exceptional guest experiences, seamless front-of-house operations, and smooth administrative processes. Job Summary

The General Manager is responsible for the effective and profitable day-to-day running of The Talli Queen. They will lead the team to ensure the pub maximises revenue and profit, while consistently delivering an exceptional guest journey.

Key Responsibilities

Team Management

  • Coach and develop the team to ensure they can perform to the required standard and consistently meet company expectations
  • Recommend and oversee training, working in partnership with Head Chef Avi to ensure it is delivered effectively
  • Lead briefings and individual and team catch-ups to build knowledge, strengthen relationships, and develop a leadership pipeline
  • Recruit and maintain all front-of-house positions, and support Head Chef Avi with back-of-house recruitment
  • Work alongside Head Chef Avi to ensure robust succession planning
  • Ensure all HR administration is maintained and adhered to
  • Continually look for ways to improve and develop the team, and to build morale and team spirit
  • Ensure consistent management of staff, working in conjunction with Head Chef Avi where necessary
  • Monitor staff appearance and take action where needed

Health & Safety

  • Be aware of, and adhere to, licensing, data protection, Health & Safety at Work, and COSHH legislation at all times
  • Carry out risk assessments to ensure the safety of staff and guests
  • Follow all company security procedures, including loss prevention and the security of staff and premises
  • Monitor and manage maintenance issues, and manage third-party contractors including cleaners where applicable

Customer Service

  • Lead the team to deliver consistently high standards of service and an exceptional food and drink offering
  • Maintain guest satisfaction through direct feedback, mystery diners, online reviews, and regular feedback from locals
  • Oversee reservations, maximising the full potential of the business without compromising the standard of the offering
  • Be fully aware of service standards and procedures, and work alongside the team in service to uphold them

Financial Management

  • Take full responsibility for the pub's results, including P&L performance, stock, and audits
  • Control all aspects of finance, including sales, gross profit, stock control, wages, and capital expenditure
  • Be accountable for all cash management, including third-party providers such as merchant services and Stripe; thoroughly investigate any cash-loss issues
  • Review the P&L account monthly with the leadership team, agreeing clear targets for improvement where needed
  • Be responsible for accurate rota planning, based on forecast sales and wage budgets
  • Plan rotas in line with budgeted targets and forecasts, adjusting hours daily in line with sales
  • Forecast sales and wages weekly/quarterly using the Planday system
  • Manage and maintain correct staffing levels in line with targets and sales forecasting
  • Manage all stock delivery processes, including checking in orders, storage, security, loss investigation, and staff training
  • Manage all stock control processes, including timely stock counts, line checks, wastage reports, loss investigation, and staff training
  • Adhere to all company policies, procedures, and licensing laws at all times

Marketing

  • Work closely with social media, marketing, and PR to develop and deliver a robust marketing strategy
  • Work together with external marketing and PR partners, attending events as needed
  • Carry out all tasks necessary to ensure the efficient operation of The Talliqueen as a business and brand ambassador

Developing the Brand

  • Ensure menus and drinks lists are constantly updated, with special attention to seasonal availability
  • Understand competitors and the market in which the brand operates, to maintain a loyal customer base while attracting new guests
  • Work alongside Head Chef Avi to evolve the food, drink, and service offering, ensuring financial viability while respecting the history and ethos of The Talli Queen
