Salary: £60,000–£85,000 + Performance Bonus DOE

We are now searching for an exceptional Head Chef to lead our kitchen and play a key role in shaping the next stage of our journey. The Opportunity

As Head Chef, you will take full responsibility for leading the kitchen operation within one of Nottingham’s most high-end restaurant environments. You will be expected to deliver exceptional food quality, consistency, pace, and presentation, while driving strong standards across every aspect of the kitchen.

This role requires a leader who can command a busy service, build and motivate a strong team, and maintain absolute control of standards in a high-volume setting. You will be a key part of the senior team and will work closely with leadership to ensure the food offering matches the level of experience we are delivering throughout the venue.

What We Are Looking For

We are looking for a proven Head Chef with experience in a high-volume, high-quality restaurant environment. You must be confident handling large cover numbers in short timeframes without compromising on quality, standards, or consistency.

You will bring strong leadership and team management skills, alongside a highly organised, disciplined, and detail-focused approach to kitchen operations. A full understanding of food safety, health and hygiene regulations is essential.

A genuine passion for Asian cuisine is also important. Experience in Japanese or Chinese food would be highly desirable, but above all we are looking for someone with the skill, presence, and ambition to lead from the front and deliver at a very high level.

What You Will Be Responsible For:

As Head Chef, you will lead and inspire your kitchen team to deliver outstanding dishes with consistency and precision. You will ensure recipe specifications are executed flawlessly and that every plate leaving the kitchen reflects the standards and identity of Nōshi.

You will manage busy services with strong control and organisation, oversee food purchasing, stock control, and kitchen GP, and ensure wage costs are managed in line with business expectations. You will also be responsible for kitchen rotas, compliance, hygiene standards, and maintaining a strong culture of accountability, discipline, and pride within the team.

Working closely with the Senior Leadership Team, you will play an important role in delivering an exceptional overall guest experience and helping to strengthen the reputation and success of the restaurant.
