£48,000 to £52,000 package including service charge | 48 hours per week | Sunday & Monday always off

Taka is a privately owned Japanese restaurant in the heart of Marylebone, built around authentic food, genuine hospitality and exceptional quality.

Led by Executive Head Chef Taiji Maruyama, a highly regarded Japanese chef with an outstanding reputation for quality and consistency, our kitchen has earned a reputation for craftsmanship, creativity and attention to detail. As we continue to grow, we're looking for a Head Chef to lead the kitchen and become part of our long-term journey.

This Head Chef role would also suit an ambitious Senior Sous Chef who is ready to take the next step in their career, working alongside an experienced Executive Head Chef who is passionate about developing talent.

The Role

As Head Chef, you'll lead a small, talented kitchen team of 4 to 5 chefs during the busiest services. This is a hands-on leadership role where you'll remain actively involved in prep and service, leading every shift from the front while maintaining exceptional standards and consistency.

You'll take ownership of ordering, stock control, GP, kitchen budgets, HACCP and team development, working closely with the owner and our Executive Head Chef to deliver an outstanding guest experience and support the company's continued growth.

This is not a clipboard or office-based Head Chef position. We're looking for someone who enjoys being on the section, coaching their team, maintaining exceptional standards and taking pride in every plate that leaves the pass.

What We're Looking For

  • Current Head Chef or ambitious Senior Sous Chef ready for the next step
  • Experience in a quality-driven Japanese restaurant
  • Calm, organised and hands-on leadership style
  • Strong understanding of stock control, ordering and food cost management
  • Excellent HACCP and food safety knowledge
  • A genuine passion for Japanese cuisine and continuous learning
