Full job description

Sous Chef
Brasserie Quartier | Durham City Centre
£28k basic pa - OTE £34k | 40 hours per week

Brasserie Quartier is a family-run, independent French-inspired brasserie in the heart of Durham. Since opening in March 2026, we've built a reputation for simple food, seasonal produce and warm, welcoming hospitality.

We're looking for a reliable and enthusiastic Junior Sous Chef to join our kitchen team.

This is an excellent opportunity for a chef who enjoys cooking fresh food and wants to work in a professional, supportive environment that genuinely values work-life balance and is a fun and rewarding place to work.

What makes this role different?

  • We close every Monday
  • We have three evening services per week
  • Daytime-only opening Tuesday, Wednesday and Sunday (10:00–16:00)
  • Two consecutive days off each week, together where possible
  • 40 contracted hours per week

The Role

Working alongside our Head Chef, you'll help deliver our brunch, lunch and dinner menus while maintaining the standards and consistency our guests expect.

You'll support daily kitchen operations, food preparation, service, food safety and allergen management, while helping develop a positive and professional kitchen culture.

We're looking for someone who:

  • Has experience working in a fresh food kitchen and at least four years kitchen experience
  • Takes pride in consistency and attention to detail
  • Understands the importance of food safety and allergen management
  • Works calmly and positively as part of a team
  • Wants to contribute to a growing independent business

A Level 2 Food Safety qualification and allergen awareness training would be advantageous, although training can be provided for the right candidate.

What We Offer

  • 40 hours per week
  • Closed Mondays
  • Work-life balance focus
  • Staff meals on duty
  • Employee discount
  • Ongoing training and development

If you're looking for a kitchen role that fits around life rather than the other way around, we'd love to hear from you.

Benefits:

  • Discounted or free food
  • Employee discount

Experience:

  • Senior or Chef de Partie/Junior Sous Chef: 4 years (required)
