Senior Sous Chef – El Puerto Restaurant, Penarth Marina

About Us

El Puerto Restaurant at The Old Custom House, Penarth Marina is one of South Wales’ best-known seafood and Mediterranean dining destinations. Part of the Martinez Group (which includes Le Monde Cardiff, La Marina, El Prado, Matisse Bar Lounge, and The Coach & Horses Hotel), we’re known for quality ingredients, a professional team, and an exceptional dining experience overlooking the marina.

We’re now looking for a Sous Chef to join our experienced kitchen brigade and support the Head Chef in leading daily service.

The Role

You’ll help oversee the kitchen operation, ensuring every dish is prepared and presented to the highest standard. Working closely with the Head Chef, you’ll assist with menu development, staff training, stock control, and maintaining a positive, professional kitchen culture.

Key Responsibilities

• Support and deputise for the Head Chef.
• Supervise, train, and motivate the kitchen team.
• Maintain consistency and quality during busy service periods.
• Contribute to menu planning, costing, and specials.
• Manage ordering, stock control, and minimise waste.
• Ensure all food safety, hygiene, and allergen standards are met.

About You

• Proven experience as a Sous Chef in a high-volume, quality-led restaurant.
• Confident leading a team and remaining calm under pressure.
• Strong background in seafood and Mediterranean cuisine.
• Excellent communication and organisation skills.
• Passionate about fresh ingredients, high standards, and teamwork.
