Overview
We are seeking a passionate and experienced Restaurant Manager to support our GM for our neighbourhood fish restaurant on Swain's Lane, N6 6AG . The ideal candidate will be a lover of restaurants and particularly wine! Excellent organisational skills and a warm, open personality are also a must. Your personable nature will be vital for running this buzzy neighbourhood restaurant, as we are looking for someone who has the confidence to get to know our many regular customers and quickly build great rapport with those visiting us for the first time.

The role involves working closely with the company directors, both front-of-house and in the kitchen/on the fish counter. Harry, Stuart and Fede work in the restaurant most days and are all passionate about food, wine and restaurant culture. We are looking for someone who is keen to be a new and vital part of The London Shell Co. team. A positive teamwork environment and exceptional service for our customers cannot be compromised. Maintaining these standards will be your job.

As a company we are looking to expand in the coming year or two, so it would be great to find someone keen to get stuck in and see where this role can take them.

The restaurant has received some top reviews in the press since opening and has become not just highly regarded but also well loved in the local area; cited by some as simply the best restaurant in the world! ;) What is particularly exciting is the other flourishing business trade along Swain's Lane, we are very lucky to be in this area and it is getting better all the time.

We have an incredible and ever-changing list of wines that you will be working on with Tom and Harry. You will of course be invited to accompany them or go solo to wine industry tastings. After time in the role the opportunity to suggest wines and products would be happily received.

Strong product knowledge is a big part of how we do things. You will be learning all the time from Fede and Stuart about the food and fish offering. Team outings to visit our suppliers are great days out that are organised a couple of times a year, your input in suggesting or organising aspects of these trips will be greatly encouraged.

Core Responsibilities

  • Communicate and collaborate regularly and productively with the company director Harry on all aspects of the running of the restaurant and FOH.
  • Lead and manage all aspects of the restaurant, ensuring high standards of hospitality and service.
  • Build the FOH team, posting job adverts, interviewing and assessing candidates.
  • Write the rota, monitor and check staff hours each week, working to labour budgets and maximising restaurant efficiency is expected.
  • Develop and implement operational procedures to enhance efficiency where you see the potential.
  • Schedule FOH team training, implement mentoring where necessary, motivate staff to achieve the best possible service levels.
  • Oversee utilities, order supplies, keep costs down.
  • Awareness and responsibility for allergens and other aspects of health and safety in preparation for and throughout service.
  • Handle all customer inquiries, feedback, and complaints in a professional manner.
  • Conduct regular performance evaluations to support team development.

Qualifications

  • Proven experience in a managerial role within the restaurant industry.
  • Strong background working with wine, any WSET qualification a bonus but a genuine passion is what we are looking for.
  • Excellent leadership skills with the ability to consolidate and manage a small team.
  • Exceptional organisational skills with attention to detail.
  • Ability to work under pressure in a fast-paced environment, and remain charming!
  • Knowledge of the Sevenrooms booking platform.
  • Knowledge of health and safety regulations related to food service.
  • Excellent communication skills, both verbal and written.
  • A passion for hospitality and providing outstanding customer service.
