Artisan Baker

Proto Artisan Bakery is looking for a baker to join its dynamic team who are passionate about sourdough with no nasties. Established in 2020 and based in Hertfordshire, we specialise in fresh sourdough and pastries, baked daily on site in our open kitchen.

We have an established bakery in Ware and have just opened up a new bakery in St Albans. The successful candidate may be required to work at both sites from time to time.

We will never get bored of saying “eat real bread” - we are looking for a new team member who believes the same.

We are looking for a baker who is ready to take the next step in their career and move into a more artisanal and creative role.

Role & responsibilities

- Measure and mix ingredients to prepare dough or batter for various baked goods including sourdough, pastries and other bakery products.

- Manage baking schedules to ensure all products are fresh and available throughout the day.

- Monitor ovens during the baking process.

- Maintain compliance with food safety regulations and quality standards.

- Collaborate with the kitchen team to ensure timely production of baked goods.

- Maintain inventory levels and order supplies as needed.

- Engage with customers, offering recommendations and sharing knowledge about our baking processes and offerings.

Requirements for the role

- Proven experience as a Baker or relevant role in a restaurant or bakery setting – minimum of 2 years’ experience required.

- Good understanding of baking techniques, including mixing, proofing, and baking.

- Knowledge of food safety practices and culinary techniques.

- Ability to follow recipes accurately and efficiently.

- Creative thinking with attention to detail in crafting artisanal and visually appealing products.

- Excellent time management skills and the ability to work in a fast-paced environment.

- Passion for quality and sustainability in baking.

- Strong attention to detail for food preparation and presentation.

- Culinary or baking certification is a plus.

Salary, working pattern and benefits

Starting salary - £30,000 per annum

Shift – full time shift, 5am - 2:30pm (9hrs), 5 days over 7 with weekend working included.
