Assistant General Manager – And Then Tooting

Full‑time | South London | £30,000

And Then Tooting is a busy, independent rooftop neighbourhood bar entering its next stage of growth. We’re looking for an Assistant General Manager who is organised, detail‑driven, and confident holding people accountable. This role supports the GM by bringing structure, consistency, and high standards to the operation — and will play a key part in our future expansion.

What You’ll Do

  • Maintain daily opening/closing checklists
  • Keep BOH organised, clean, and compliant
  • Ensure standards (lights, menus, toilets, vibe) are met every shift
  • Manage BrightHR, Health & Safety checks, and compliance logs
  • Hold the team accountable to expectations and routines
  • Support supervisors with structure and follow‑through
  • Improve systems and processes to ensure consistency
  • Cocktail specs
  • Menu development

What You Bring

  • Experience as Supervisor/AM/DM in a busy hospitality venue
  • Strong organisational and admin skills
  • Confidence correcting small details and enforcing standards
  • Calm, consistent leadership style
  • Understanding of compliance and H&S
  • Pride in structure, systems, and operational discipline
