Sous Chef Breakfast – New Opening | Italian & Mediterranean Restaurant | London

We are seeking a passionate and highly experienced Sous Chef to join the opening team of an exciting new Italian and Mediterranean sharing-style restaurant focus on breakfast and very good quality bakery products in London.

This is a fantastic opportunity to be part of a brand-new kitchen, working alongside a well-structured and ambitious team, with a clear goal of achieving AA Rosette standards.

About the Role As Sous Chef Breakfast, you will play a key leadership role in delivering the Executive Chef’s vision, standards, and culture across the kitchen. You will ensure consistency, quality, and excellence in every dish, while maintaining the highest standards of food safety and hygiene.

This is a high-responsibility position suited to a chef who thrives in a fast-paced, quality-driven environment.

Key Responsibilities

  • Support the Senior Sous Chef and Executive Chef in leading and developing the kitchen team
  • Working from 5 AM till 3 PM, 5 days a week
  • Deliver consistently high-quality dishes in line with strict recipes and specifications
  • Maintain rigorous food safety and hygiene standards
  • Enforce house rules, structure, and kitchen discipline
  • Contribute to a positive, respectful, and high-performance kitchen culture
  • Assist in driving the kitchen towards AA Rosette-level execution

Requirements

  • Minimum 5+ years’ experience in busy, high-quality London restaurants
  • Experience in busy breakfast venues
  • Able to travel to work and be on shift at 5 AM
  • Strong background in fresh food and high-volume service
  • Proven ability to work with strict recipes and structured systems
  • Excellent leadership skills and attention to detail
  • Strong work ethic, discipline, and professional integrity
