About the Role

Our award-winning kitchen team have an exciting new opportunity for a Senior Chef de Partie to join us on a permanent full-time basis based in our Jigger Inn team. You will create exquisite dishes using locally sourced Scottish produce and be responsible for having your own section whilst gaining invaluable guidance and development within a multi outlet hotel kitchen.

In this role you will assist the Junior Sous Chef in the preparation and service of food ensuring that the highest standards are maintained at all times. Additionally, you will ensure that the kitchen areas designated, equipment and utensils are always kept clean and tidy to the Old Course Hotel standards.

Your responsibilities will include;

• Prepare all foods necessary for service to the demonstrated culinary standards. Produce all quantities according to forecast on station production checklist to reduce food cost.
• Prepare all foods according to food orders, maintaining the established pace of service. Prepare all special needs in foods requested as part of our customer focus directives.
• Ensure the quality of food is of the exceptional standard expected when dining at the hotel.
• Ensure team members under your direction are producing a high standard.
• Train and delegate tasks to junior team members
• Ensure that the ordering checklists are adhered to by all junior chef’s and up to date.
• Rotate all food stocks
• Conduct monthly inventory taking
• Ensure that foods are prepared, stored & served under conditions directed with in the Food safety policy

Essential Requirements

• Possess a solid knowledge of culinary terminology and possess SVQ 1& 2 or equivalent.
• Have at least 2 years previous culinary experience
• Have an advanced knowledge of restaurant and banquet buffet service, ala carte service and plated banquet service.
• Develop daily specials that contribute to the development of our food program and new menus.
• Demonstrate leadership in your work group, have the ability to lead the kitchen in the absence of the Sous chef.
• Have an advance understanding of the development of checklists systems of managing production. Be able to develop them for problem solving when necessary.
• Possess an awareness of financials to support control of food costs

Permanent, Full Time, 40 hours per week, 5 days out of 7

Salary

£33,341.44 per annum
