Salary: £33,766.20 per annum + Generous Service Charge

About Us

Sunborn London Yacht Hotel is a spectacular 108-metre floating hotel located at Royal Victoria Dock, directly opposite the ExCeL London Exhibition Centre. The Yacht features 138 spacious guest rooms with bespoke furnishings, an elegant restaurant, a stylish lounge bar, and versatile event spaces with stunning views of Canary Wharf.

Job Overview

As Restaurant Manager, you will be responsible for the day-to-day operation of our restaurant, ensuring exceptional guest satisfaction, strong team performance, and high operational standards. You will lead by example, motivate your team, manage service delivery, and drive revenue opportunities while maintaining a warm and welcoming atmosphere for guests.

This position is primarily based on afternoon and evening shifts, usually finishing at 23:30. Shift patterns may vary according to business needs.

Key Responsibilities

  • Lead and manage the daily restaurant operation, ensuring seamless service delivery.
  • Deliver exceptional guest experiences and promptly resolve guest concerns.
  • Train, coach, motivate, and develop team members to achieve high performance standards.
  • Ensure compliance with food safety, health and safety, and licensing regulations.
  • Monitor staffing levels and assist with rota planning to meet business demands.
  • Drive sales and maximise revenue opportunities through excellent service and upselling initiatives.
  • Maintain high standards of cleanliness, presentation, and operational efficiency.
  • Conduct team briefings and communicate business objectives effectively.
  • Manage stock control, ordering, and cost management within departmental budgets.
  • Work closely with the wider Food & Beverage and Hotel Management teams to achieve business goals.

What We're Looking For

  • Previous experience as a Restaurant Manager or Assistant Restaurant Manager within a hotel, restaurant, or hospitality environment.
  • Strong leadership and people management skills.
  • Passion for delivering outstanding customer service.
  • Excellent communication and interpersonal abilities.
  • Ability to work under pressure while maintaining attention to detail.
  • Good understanding of food safety and health & safety regulations.
  • Financial awareness with experience managing costs and driving revenue.
  • Flexible approach to working hours, including evenings, weekends, and public holidays.
  • Personal Licence and Food Safety qualifications would be advantageous but are not essential.
