We are currently seeking an assured, inspiring and results driven Restaurant Manager to lead our exciting new Asian restaurant, launching in spring/summer 2027.

The restaurant will be inspired by some of the greatest culinary capitals of Asia, bringing together exceptional Japanese and Chinese cuisine, world-class drinks and cocktails, immersive design and genuine hospitality to create an experience unlike anywhere else in Scotland.

The new restaurant will be housed in the North Lodge, a standalone building nestled in the grounds of the hotel. Throughout the years, the lodge has served many different purposes, once housing the office of Jackie Stewart, who founded the Shooting School at Gleneagles in 1985.

Here's a bit more detail on what we see you doing in this role:

• Leading from the front, a visible and inspiring presence on the restaurant floor, you'll lead lunch and dinner service across our five-day operation, delivering seamless execution and memorable guest experiences at every opportunity
• Together with our Head Chef, you'll set the tone for the entire restaurant, cultivating a culture of excellence, collaboration and mutual respect, where front and back of house operate in perfect harmony
• Taking full accountability for the commercial performance of the restaurant, balancing operational excellence, labour management and profitability with an uncompromising commitment to exceptional guest experiences
• Bringing the theatre of contemporary Asian hospitality to life, you'll ensure every detail, from service delivery and presentation to tableside experiences and beverage rituals, is executed with precision, confidence and style
• Creating an environment where people can thrive, you'll inspire, coach and develop a high-performing team, fostering a culture of curiosity, growth and a shared passion for delivering world-class hospitality
• Developing deep expertise across Japanese and Chinese cuisine, sake, wine, cocktails and premium teas, you'll equip your team with the confidence and knowledge to create engaging, memorable and highly personalised guest experiences
• Always looking for new ways to elevate our guest experience, you'll create memorable moments that inspire loyalty, generate excitement and establish the restaurant as a must-visit destination
• As one of the restaurant's founding leaders, you’ll help shape our culture, standards and reputation, establishing a new benchmark for contemporary Asian dining at Gleneagles
• Interacting with our guests, always warm, professional, helpful and doing everything you can to exceed their expectations; playing your part in making their stay with us luxurious in every way

The kind of person we're looking for:

• You’ll bring significant experience leading premium or luxury restaurant operations, ideally within contemporary Asian, Michelin-recognised or destination dining environments. Comfortable operating at the highest level, you understand what it takes to deliver exceptional guest experiences, inspire high-performing teams and maintain uncompromising standards across every aspect of the operation
• Your passion for Japanese and Chinese cuisine, exceptional beverages and the artistry behind great hospitality is evident in everything you do, inspiring both guests and colleagues alike
• Ambitious, positive and determined, you're committed to helping establish one of the UK's leading contemporary Asian restaurants, creating exceptional experiences for guests while inspiring your team to perform at their very best
• An inspirational leader and exceptional host, you’ll work in close partnership with your Head Chef to create a seamless guest experience, cultivate a high-performing team and establish a culture of excellence throughout the restaurant
• You combine sharp commercial judgement with operational excellence, using insight, initiative and attention to detail to enhance performance while maintaining exceptional standards
• Meticulous in your approach, with exceptional attention to detail, you understand that it is the consistent delivery of the smallest details that transforms excellent service into truly memorable guest experiences
• You thrive in the pace and energy of luxury hospitality, remaining calm under pressure, making sound decisions and consistently delivering exceptional standards, even in the most demanding environments
• Passionate about developing people, you create an environment where individuals feel supported, empowered and inspired to grow, using coaching, mentoring and leading by example to help them reach their full potential
• Highly motivated and possessing an immense sense of pride in your work; you're passionate about delivering the high standards for our guests in line with the Gleneagles brand
• You have a positive “can do” attitude to solving problems in a professional and courteous manner
• A strong team player with great communication skills and an enthusiastic approach; you're well organised and punctual with an eagle eye for detail
