General Manager – Buck’s Bar Grindlay Street, Edinburgh

Salary: £39,000 per year
Tips: Approximately £250–£300 per week
Bonus: Up to £9,000 per year
Total earning potential: Over £60,000 per year

Buck’s Bar is looking for an experienced, hands-on General Manager to lead our busy Grindlay Street restaurant in Edinburgh.

This is a great opportunity for a confident and commercially minded manager who enjoys leading from the front, developing a strong team and delivering a brilliant customer experience.

We are an independent and growing restaurant group, and we are looking for someone who takes real ownership of their venue and understands how to balance great hospitality with strong operational control.

The Role

As General Manager, you will be responsible for the overall performance of the restaurant, including:

  • Leading and motivating the front-of-house and kitchen management teams
  • Ensuring customers receive consistently excellent food, drinks and service
  • Managing rotas, staffing levels and wage costs
  • Recruiting, training and developing team members
  • Maintaining strong control of stock, ordering and company budgets
  • Driving sales and identifying opportunities to grow the business
  • Maintaining company standards across service, cleanliness and compliance
  • Resolving operational issues quickly and professionally
  • Creating a positive, well-organised and high-performing working environment

About You

We are looking for someone who:

  • Has previous General Manager experience within a busy, high-volume restaurant, bar or hospitality venue
  • Has strong experience across both food and drink-led operations
  • Is a confident, fair and supportive leader
  • Can train, motivate and develop a team
  • Is commercially aware and comfortable managing wages, stock and budgets
  • Is organised, proactive and able to remain calm during busy services
  • Takes pride in delivering excellent hospitality and maintaining high standards
  • Is willing to be hands-on and lead from the front

A Personal Licence is preferred but not essential.
