General Manager – Spanish Restaurant

Central Glasgow
£45,000 per year + competitive bonus + tips

We are looking for an experienced, passionate and energetic General Manager to lead our Spanish restaurant in the heart of Glasgow.

This is an exciting opportunity for a natural hospitality leader who knows how to build an engaged, motivated team and create a restaurant culture where both employees and guests feel genuinely valued.

The successful candidate will have a real passion for quality food and drinks, exceptional service and all things Spanish. You will take full ownership of the restaurant’s day-to-day operation, ensuring consistently high standards while driving sales, developing the team and delivering strong commercial results.

The role

You will be responsible for:

  • Recruiting, developing and inspiring an enthusiastic restaurant team
  • Creating an engaging, positive and high-performing workplace culture
  • Delivering warm, energetic and memorable guest experiences
  • Maintaining exceptional standards of food, drink, service and presentation
  • Driving sales, profitability and business growth
  • Managing labour, stock, costs and operational performance
  • Developing the restaurant’s Spanish drinks offering, including wines, beers, cocktails and spirits
  • Working closely with the kitchen and senior team to deliver a consistent, authentic experience
  • Building strong relationships with guests, suppliers and the local community
  • Ensuring all licensing, health and safety, and food-safety standards are maintained

About you

We are looking for someone who:

  • Has significant management experience within a quality, high-volume restaurant or bar
  • Is passionate about building, engaging and retaining great teams
  • Leads from the floor and sets the standard through their own energy and enthusiasm
  • Has a genuine interest in Spanish food, wine, drinks and culture
  • Combines exceptional hospitality with strong commercial awareness
  • Is confident managing budgets, labour costs, stock and financial performance
  • Remains calm, organised and decisive in a busy restaurant environment
  • Takes pride in creating a workplace where people enjoy coming to work

Previous experience in a Spanish or Mediterranean restaurant would be advantageous, but genuine passion, leadership ability and the right personality are equally important.
