GIOVANNIS RESTAURANT GROUP

GENERAL MANAGER

  • Base Pay: £40,000 - £50,000 per year
  • Bonus: Upselling rewards, plus a share of service charge and tips under the restaurant’s tronc policy and KPIs

  • Hours: Days, evenings and weekends, with expected hours agreed before offer

THE ROLE

You will run one of the Giovannis restaurants, and be flexible with cross-site when needed, and own its commercial and operational performance. You will lead the team on the floor, protect service standards and use accurate forecasts, rotas and stock controls to deliver the agreed profit plan.

You will report to the financial controller and CEO and have authority to act on the numbers, develop your team and address challenges early.

What you will own

  • Restaurant P&L, budgets and weekly performance reporting
  • Sales, covers, average spend and local revenue opportunities
  • Demand-led rotas that protect service without carrying excess labour
  • Food and drink gross profit, stock variance, waste and controllable costs
  • Recruitment, onboarding, training, performance and retention
  • Succession plans for supervisors and managers
  • Guest satisfaction, complaints and recovery
  • Reservations, events, private dining and repeat business
  • Stock, ordering, takings and supplier controls
  • Food safety, allergens, licensing, health and safety and employment standards
  • Engagement with the companies social media and marketing team

What we need

  • At least three years running a busy, full-service restaurant
  • Direct responsibility for P&L, budgets, labour and gross profit
  • Evidence that you have improved sales, costs, guest experience and staff retention
  • Strong people management, including training and development
  • Experience forecasting demand and building rotas
  • Calm, visible leadership during busy services
  • Clear written and spoken English for safe service and team leadership
  • Level 3 Food Safety is preferred; training can be arranged
