ASSISTANT RESTAURANT MANAGER

THE PACKAGE AT A GLANCE

  • Base Pay: £35,000 per year
  • Bonus: KPI-based bonus, upselling rewards and a share of service charge and tips under the restaurant’s tronc policy
  • Total Earnings: £35,000–£45,000 per year, inclusive of variable bonus and service charge
  • Rewards: Holiday pay, pension, sick pay, paid training, staff meals and discounts, company events, uniform, progression opportunities and free parking where available
  • Contract: Full-time
  • Hours: Days, evenings and weekends, with expected hours agreed before offer
  • Location: Central Cardiff, with occasional cross-site working
  • Cashless Workplace: All customer payments are cashless; no cash handling is required

THE ROLE

Support the General Manager in running one of our Cardiff restaurants and deputise when required. You will lead shifts from the floor, maintain service standards and help deliver the restaurant’s commercial and operational targets.

Working with the General Manager, Financial Controller and CEO, you will use accurate forecasts, rotas, stock controls and performance reporting to identify problems early and take practical action.

Performance will be measured against restaurant profit, sales, labour, gross profit, stock and waste, guest feedback, team development, compliance, events and online delivery performance.

KEY RESPONSIBILITIES

  • Lead daily restaurant operations and take charge when the General Manager is unavailable.
  • Monitor the P&L, budgets and weekly performance figures.
  • Grow sales, covers, average spend, events, private dining, repeat business and online delivery.
  • Build demand-led rotas that protect service without carrying unnecessary labour.
  • Control food and drink gross profit, stock variance, waste and other controllable costs.
  • Manage stock, ordering, cashless takings, suppliers and invoice controls.
  • Recruit, onboard, train and coach employees while supporting retention and succession planning.
  • Maintain service quality and resolve guest complaints calmly and effectively.
  • Work with the marketing team on promotions, social media and local revenue opportunities.
  • Maintain food-safety, allergen, licensing, employment, health-and-safety and audit standards.
  • Negotiate effectively with suppliers and other commercial partners.

ESSENTIAL REQUIREMENTS

  • At least three years’ experience managing a busy, full-service restaurant.
  • Experience with P&L, budgets, labour costs, rotas and gross-profit control.
  • Evidence of improving sales, costs, guest experience or employee retention.
  • Strong people-management, training and development skills.
  • Experience forecasting demand and building commercially responsible rotas.
  • Calm, visible leadership during busy services.
  • Strong commercial judgement and negotiating ability.
  • Clear written and spoken English for safe service and team leadership.
  • Level 3 Food Safety is preferred; training can be arranged.
