Job Summary

We are seeking a skilled and passionate Sushi Chef to join our culinary team. The ideal candidate will possess a strong understanding of traditional and contemporary sushi preparation techniques, ensuring the highest standards of quality, presentation, and hygiene. This role offers an exciting opportunity to showcase your creativity and expertise in a vibrant, customer-focused environment. The Sushi Chef will be responsible for preparing authentic sushi dishes that delight our guests and uphold our restaurant’s reputation for excellence.

Duties

  • Prepare a variety of sushi dishes, including nigiri, sashimi, maki rolls, and speciality items, adhering to established recipes and presentation standards.
  • Maintain a clean and organised work station in compliance with food safety regulations.
  • Source and select fresh ingredients, ensuring quality and freshness at all times.
  • Monitor stock levels of ingredients and notify management when supplies need replenishing.
  • Ensure all food is prepared in a timely manner to meet service demands while maintaining high quality.
  • Uphold strict hygiene standards, including proper handling and storage of raw fish and other perishable items.
  • Assist in training junior kitchen staff on sushi preparation techniques and safety procedures.
  • Contribute to creating an inviting atmosphere by engaging positively with guests when appropriate.

Experience

  • Proven experience as a Sushi Chef or similar role within a reputable restaurant or sushi bar.
  • Strong knowledge of Japanese cuisine, sushi techniques, and food safety standards.
  • Ability to prepare a wide range of sushi styles with precision and artistic flair.
  • Familiarity with sourcing fresh ingredients locally or internationally.
  • Excellent organisational skills with the ability to work efficiently under pressure during busy service hours.
  • Certification in food safety or HACCP is desirable but not essential.
