Job Summary

The Hatherley Manor Hotel & Spa is an independently owned 17th-century manor house in the rolling Gloucestershire countryside. The 4-star, AA hotel features an elegant restaurant, cosy lounge bar within the original beams of the manor, a luxurious state of the art Spa and 57 elegant bedrooms.

Hatherley Manor Hotel & Spa is looking for an experienced and passionate Restaurant Manager to lead our Restaurant and Lounge team. This is a fantastic opportunity for a hands-on hospitality professional who thrives on delivering exceptional guest experiences and driving a high-performing team..

As Restaurant Manager, you will take ownership of the day-to-day running of our Restaurant and Bar operations, ensuring the highest standards of service, quality, and guest satisfaction at all times. You'll lead from the front, motivating your team to deliver a warm, professional, and memorable experience for every guest.

Key Responsibilities

  • Oversee the daily operation of the restaurant and lounge bar, ensuring smooth and efficient service
  • Lead, motivate, and develop the restaurant team, including recruitment, training, and rota management
  • Maintain the highest standards of guest service, presentation, and hygiene
  • Manage stock control, ordering, and supplier relationships
  • Monitor and control costs, wastage, and departmental budgets
  • Work closely with the Head Chef and kitchen team to ensure seamless communication between front and back of house
  • Handle guest feedback and resolve any issues promptly and professionally
  • Ensure full compliance with health & safety, licensing, and food hygiene regulations
  • Support the planning and delivery of special events, functions, and promotions

The Ideal Candidate should possess the following attributes

  • Previous experience in a Food and Beverage senior role or preferably Restaurant Manager, within a hotel or restaurant
  • Strong leadership skills with a hands-on, lead-by-example approach
  • Excellent communication and guest service skills
  • Good working knowledge of stock control, cost management, and rota planning
  • A genuine passion for food, drink, and hospitality
  • Must be flexible to work evenings, weekends, bank holidays and across Christmas
  • High quality of service and consistent strong standards
  • Well presented with a keen eye for detail and cleanliness and possess first class communication and customer service skills
