Sous Chef

The Bolingbroke pub is a fun and vibrant pub. We are looking for a talented & passionate sous chef to join our kitchen team. We are a busy and successful gastropub serving high end classic pub food.

The role:

  • £38,000 including tronc, per hour approx 45 hours over 5 days, 2 days off plus quarterly profit related pay ( bonus on kitchen performance)
  • Leads kitchen team in head and sous chef's absence
  • Provides guidance to junior kitchen staff members, including, but not limited to line cooking, food preparation, and dish plating
  • Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
  • Keeps cooking stations stocked, especially before and during prime operation hours
  • Assists in training new kitchen employees to restaurant and kitchen standards
  • Manages food and product ordering by keeping detailed records and minimises waste, plus works with existing systems to improve waste reduction and manage budgetary concerns
  • Supervises all food preparation and presentation on their shift to ensure quality and restaurant standards
  • Verifies that food storage units all meet standards and are consistently well-managed

The candidates should:

  • have at least one year’s experience in a similar role in a busy pub kitchen
  • have a passion for seasonal food and produce
  • possess a positive attitude and good communication skills
  • have exceptional knowledge of kitchen hygiene and food preparation
  • flexibility with working hours – must be available evening and weekends
