Kitchen Assistant – Nishiki, Edinburgh

Company Overview

From the team behind Yamato, Edinburgh’s premium sushi restaurant, comes Nishiki — a new casual venue focused on warm hospitality, efficient service, and quality-driven food inspired by Izakaya culture.

Role Overview

We’re looking for a Kitchen Assistant to take ownership of a section and help us deliver consistency and quality across every service. You’ll work closely with senior chefs and help support younger team members.

What you'll be responsible for:

  • Running your section with care, attention and speed
  • Prepping and plating to spec with a clean, organised approach
  • Keeping mise en place tight and managing prep lists
  • Supporting junior staff and contributing to a calm kitchen culture
  • Upholding kitchen hygiene and food safety throughout your shift

What we’re looking for:

  • Experience in a similar kitchen role
  • Confidence and ownership over prep and service
  • Attention to detail and love of high-quality cooking
  • Team-first attitude and willingness to grow
