We are seeking a skilled and passionate Pastry Chef (Croissant & Viennoiserie Specialist) to join our culinary team. The ideal candidate will have hands-on experience in laminated dough production and a strong understanding of traditional and modern croissant techniques. This role offers an exciting opportunity to produce consistently high-quality croissants and viennoiserie in a professional kitchen environment, contributing to an exceptional guest experience.

Duties & Responsibilities

  • Prepare, laminate, proof, and bake croissants and viennoiserie to the highest standard, including classic butter croissants, pain au chocolat, almond croissants, and seasonal variations.
  • Ensure consistency in dough preparation, lamination, shaping, and baking across daily production.
  • Assist in the development of new croissant flavours, fillings, and viennoiserie concepts in collaboration with the head chef.
  • Maintain strict adherence to food safety, hygiene, and allergen control standards at all times.
  • Ensure the pastry section, equipment, and work surfaces are kept clean, organised, and fully operational.
  • Monitor ingredient stock levels (flour, butter, chocolate, fillings) and place orders as required to support smooth production.
  • Work closely with the kitchen and front-of-house teams to ensure timely production for service.
  • Follow portion control and production guidelines to minimise waste while maintaining premium quality.

Qualifications & Skills

  • Proven experience as a Pastry Chef or Baker, with a strong focus on croissants and laminated dough.
  • Solid knowledge of viennoiserie techniques, fermentation, proofing, and baking processes.
  • Experience working in a professional bakery, café, or restaurant kitchen is highly desirable.
  • Formal culinary or baking qualifications are an advantage but not essential for highly skilled candidates.
  • Strong organisational skills and the ability to work efficiently in a fast-paced environment.
  • A genuine passion for pastry, precision, and product presentation.
  • High standards of food safety, cleanliness, and attention to detail.
