Experienced Restaurant Manager

Café Vin Cinq, Rugby
Full Time | Permanent
Salary Package: £43,000 - £47,000 per annum + Annual Performance Bonus

About Us

Café Vin Cinq is an independent, family-owned fine dining restaurant in the heart of Rugby. We are passionate about delivering exceptional food, wine and service whilst maintaining a warm and welcoming atmosphere for our guests.

We are now looking for an ambitious Restaurant Manager who understands that hospitality is about more than service. We need someone who can drive sales, manage costs, lead a team and consistently deliver strong financial performance.

The Role

This is a senior management position with full responsibility for the restaurant's operational and financial performance.

You will be accountable for leading the front of house team, achieving sales targets, controlling labour costs, maximising profitability and ensuring an exceptional guest experience at all times.

This role would suit someone who enjoys running a business as if it were their own and takes pride in delivering results.

Key Responsibilities

Financial Performance

  • Drive revenue growth through exceptional guest experiences and effective upselling
  • Take ownership of weekly and monthly sales targets
  • Monitor and improve average spend per head
  • Analyse sales performance and identify opportunities to increase revenue
  • Work closely with senior management to deliver agreed business objectives
  • Produce and review weekly KPI reports

Labour Management

  • Create efficient rotas that balance service standards with labour cost control
  • Manage labour costs in line with agreed budgets and targets
  • Monitor productivity and team performance throughout each shift
  • Ensure staffing levels are appropriate for business demand
  • Take responsibility for minimising unnecessary overtime and agency costs

Team Leadership

  • Recruit, train and develop front of house employees
  • Conduct regular performance reviews and coaching sessions
  • Manage employee performance, attendance and disciplinary matters where required
  • Build a positive, professional and high-performing culture
  • Lead by example and maintain high standards at all times

Operational Excellence

  • Ensure smooth day-to-day operation of the restaurant
  • Maintain exceptional service standards
  • Handle guest feedback and complaints professionally
  • Ensure compliance with all food safety, health and safety and licensing requirements
  • Work closely with the kitchen team to ensure excellent communication and service delivery
  • Support the planning and delivery of private dining events and special occasions
