Job Summary

The role’s main purpose is to carry out all cleaning required in the kitchen and back of house areas and to perform duties in compliance with health and safety standards.

Brand Excellence

• Follow the cleaning schedule and work in compliance with health and safety standards
• Ensure that all duties are carried out to the highest standards as laid down by the Head Chef
• Inspect the restaurant’s back-of-the-house areas regularly to check general maintenance and cleanliness.
• Be fully conversant with the Restaurant Hygiene policy.
• Ensure all Health & Safety and Food Hygiene policies are adhered to, protecting employee and customer safety.
• Ensures that the COSMO’s Health and Safety standards are strictly followed.

Kitchen Operations

• To ensure all areas of the kitchen are clean at all times
• Wash dishes, glassware, flatware, pots, or pans, using dishwashers or by hand
• Maintain kitchen work areas, equipment, or utensils in clean and orderly condition
• Place clean dishes, utensils, or cooking equipment in storage areas
• Sort and remove trash, placing it in designated pickup areas
• Sweep or scrub floors
• Stock supplies, such as food or utensils, in serving stations, cupboards, refrigerators, or salad bars
• Load or unload trucks that deliver or pick up food or supplies
• Carry out any cleaning duties to the standard required and when necessary
• Ensure all equipment is kept clean & in good working condition. All defaults should be reported to the Senior Chef on duty
