The Opportunity

We’re looking for an experienced, energetic, and hospitality-driven Floor Manager to join our flagship Bedales of Borough wine bar in Borough Market.

Set in the heart of London’s most iconic food market, our vibrant three-storey wine bar and bustling terrace is all about great wine, seasonal food, and genuine hospitality. With hundreds of wines, market-inspired small plates, private events, and wine tastings, no two services are ever quite the same.

This is a hands-on role for someone who loves being on the floor—leading from the front, developing a great team, and creating memorable guest experiences.

The Package & Perks

  • Salary: £35,000 per year + substantial service charge (tronc)

The Role

Working closely with the General Manager and management team, you’ll take ownership of the floor and help ensure every service runs smoothly.

  • Lead the Floor: Run busy services with confidence, energy, and attention to detail.
  • Guest Experience: Deliver warm, knowledgeable service and build genuine relationships with our guests.
  • Team Leadership: Motivate, train, and develop the FOH team, leading by example.
  • Wine & Food: Help the team confidently recommend and sell our wines and seasonal dishes.
  • Commercials: Support sales, labour management, cost control, and overall business performance.
  • Operations: Support opening and closing, reservations, cash handling, and daily procedures.

What We Are Looking For

  • Experience as a Floor Manager, Assistant Manager, or similar role in a busy restaurant or wine bar.
  • A confident, positive leader who stays calm under pressure.
  • Strong organisational and communication skills.
  • A genuine passion for wine, food, and hospitality – WSET Level 2 or equivalent is a strong plus.
  • Commercial awareness and excellent attention to detail.
  • A natural people person who takes pride in delivering outstanding service.
