Full job description

We’re looking for an experienced Restaurant Manager to lead day-to-day floor operations and service delivery across Rotunda, Green & Fortune’s flagship restaurant, featuring live-fire cooking, an open-plan kitchen, a private dining room and intimate canal views. This is a hands-on leadership role for someone who thrives on the floor, enjoys building strong teams, and is passionate about delivering consistently high guest experiences.

This role is suited to an experienced Restaurant Manager or a high-performing Assistant Manager from a high-volume, high-profile venue

This role is based at the company’s head office site, working closely with the senior leadership team.

Key Responsibilities:

Operations

  • Lead the full restaurant service cycle, from pre-service preparation through to close-down.
  • Be a visible floor leader, ensuring smooth service and strong guest flow.
  • Maintain high standards of presentation and organisation across all FOH areas.
  • Review bookings, VIP notes and running orders to ensure service readiness.

People

  • Lead, motivate and develop the restaurant team, setting clear standards for service and professionalism.
  • Support recruitment, onboarding and ongoing training of FOH staff.
  • Deliver engaging pre-shift briefings and on-the-floor coaching.
  • Plan rotas and resourcing in line with business needs.

Financial acumen

  • Plan labour in line with budgets and trading patterns.
  • Monitor stock, consumables, wastage and shortages.
  • Oversee stock takes and report variances.
  • Maintain accurate menus, pricing and presentation.

Teamwork

  • Work closely with kitchen, bar, events, café and management teams.
  • Represent the restaurant operation in cross-department planning.
  • Review pre- and post-service feedback to drive improvement.
  • Act as a key point of contact for guest feedback and service recovery.
