At Parkdean Resorts, we’re looking for a talented and motivated Sous Chef to support the smooth running of our busy kitchen. If you’re confident in leading others, thrive in high‑pressure environments, and love creating high‑quality dishes, this role gives you the perfect opportunity to develop your career in a fast‑paced, rewarding setting.

As Sous Chef, you’ll work closely with the Head Chef to deliver exceptional food and ensure the efficient and safe operation of our kitchen. You’ll support stock and budget controls, help maintain excellent food standards, and play a key role in training and developing the kitchen team. You will also act as the senior kitchen lead when the Head Chef is off‑shift, ensuring continuity and consistency at all times.

What you will be doing...

  • Assist the Head Chef in leading, developing, and motivating the kitchen team.
  • Maintain exceptional standards of food preparation, presentation, and service.
  • Oversee kitchen management tasks, including food diaries, health & safety documentation, stock management, and training.
  • Support menu planning and delivery, ensuring portion controls are met, budgets are followed, and profitability is maximised.
  • Take responsibility as senior kitchen lead in the absence of the Head Chef.
  • Monitor waste, efficiency, and food costs to help achieve financial targets.
  • Support the recruitment, induction, and development of kitchen staff.
  • Keep the kitchen clean, organised, and safe at all times.
  • Report any suspected weaknesses or breaches within company information systems.
  • Uphold safeguarding responsibilities and maintain a safe environment for colleagues, guests, and visitors.

About you...

  • Experience leading and motivating a kitchen team.
  • Strong commercial awareness, with confidence working towards budgets and KPIs.
  • The ability to train and develop others while fostering a positive, supportive kitchen culture.
  • Experience working in high‑volume, fast‑paced kitchen environments.
  • Flexibility to work varied shifts, including weekends, evenings, and bank holidays.
  • A passion for creating high‑quality, innovative dishes that delight guests.
  • Strong organisational, planning, and communication skills.
